New York Style Cheesecake

The New York Style Cheesecake from "Baked to Perfection" by Katarina Cermelj is my new favourite cheesecake ever! It is easy to make, and leaves everyone asking "are you sure this is gluten free?". I did substitute the crust for crushed gluten free maple cookies which worked out amazingly, I just had to add more butter.

If you are looking for something to bake for a Celiac or Gluten Sensitive person in your life, I would seriously recommend this cheesecake. Just make sure to double check each of your ingredients are gluten free, and your space is completely clear of any other gluten so there is no cross contamination!
