Fudgy Brownie Cookies

The fudgy brownie cookie from "Baked to Perfection" by Katarina Cermelj is my new favourite gluten free dessert! They are fairly easy to make, and leave everyone asking "are you sure this is gluten free?". If you are looking for something to bake for a Celiac or Gluten Sensitive person in your life, I would seriously recommend these cookies. Just make sure to double check each of your ingredients are gluten free, and your space is completely clear of any other gluten so there is no cross contamination!
